Copi, the consumer brand for invasive carp launched in 2022 by the Illinois Department of Natural Resources (IDNR), was featured during the National Restaurant Association Show this weekend in Chicago.
Copi® are mild, clean-tasting fish with heart-healthy omega-3s and are high in protein. IDNR believes that increased consumption will help to prevent the fish from decimating native fish populations in the Great Lakes and restore an ecological balance to waterways downstream.
IDNR has led the rebranding of invasive carp to combat public misconceptions about the fish and increase consumer interest in this healthful, delicious, top-feeding protein source – all with the intent of helping a new industry become established.
The Copi® brand launched in June 2022, generating regional, national, and international attention. Illinois processors have reported significant increases in sales since the launch, and nationwide online sales are now available.
The National Restaurant Association Show is a major event for US restauranteurs and other members of the foodservice industry: every culinary category, trend, and solution is represented to connect people and products. Attendees had the opportunity to enjoy Copi in a variety of dishes, including chili, croquettes, and in sliders.
These and other Copi products will also return for the Illinois State Fair in August.
